Cookies are great snacks that nobody can resist. I always wondered what it would be like to make a healthier version of cookie. So I put together this simple recipe enriched with whole wheat flour, oatmeal and heart healthy walnuts. The layer of chocolate give richness to mildly sweetened coffee flavored cookie base.
Thanks to my husband who introduced me to the chocolate coating over cookie.
The recipe yields approx. 35 pieces of bite size bars and I’ve used half and half oil-butter and all purpose-whole wheat flour.
1/4 cup butter, softened (1/2 stick)
1/4 cup canola oil
2 tsp vanilla extract
3/4 cups all-purpose flour
3/4 cup whole wheat flour
1 packet instant oatmeal (chocolate/maple)
1/2 tsp baking powder
1/4 tea spoon salt
2 tsp (nestle) instant coffee powder dissolve in 2 teaspoon milk
1 1/2 cups roasted walnut/pecans (crushed)
1 cups semisweet chocolate chips
Set egg and butter outside to room temperature. Sift dry ingredients together and preheat oven to 375 degrees.
Beat the butter and sugar together, then add egg and beat for 3 minutes.
Add dissolved coffee, vanilla extract and beat till it even mixture.
Add flour mixture and knead till soft round dough, place it in refrigerator for few minutes.
Use cookie sheets or pizza baking tray, butter the tray and spread the dough to a thin layer with hands.
Bake for 10 minutes, remove tray and sprinkle semisweet chocolate chip/chunks evenly and leave the tray in oven for a minute.
Spread the molten chocolate throughout the cookie and add the crushed walnut. Dab the crumbs lightly.
Let it cool for 5 minutes and cut into squares.
