Savory puffs – Tidbits for holidays

Day – night, warm – cold,  jolly – gloomy… there are two extremes to everything in life. Sometimes it’s not as bad as we think it is. Like the way we look forward to a snowy christmas, despite the cold… and so is the perfect combo of sweet and savory dishes to make us feel content.

Try out this very simple yet amazing recipe to make airy-savory puffs with store brought pastry sheets. 

Ingredients

Frozen Puff pastry sheets

All purpose flour – 2 spoons

Butter – 2 spoons

Egg white – 1

Water – 2 spoons

Salt – per taste

For spinach-cheese filling

Spinach – 1 bunch

Cheese – Cheddar or mozzarella

Red pepper – ½ spoon

Potato-peas filling

Potato – 1

Frozen peas – 1/2 cup

Cilantro leaves – 1 spoon

Turmeric powder – ¼ t spoon

Paprika powder – ½ t spoon

Indian garam masala – ½ t spoon

Procedure

Defrost the puff pastry sheet overnight by placing in the refrigerator.

Sprinkle some flour and roll the pastry sheet to blend in the folds.  Carefully stretch the sheet to double the original size.

Spread a spoon of molten butter and fold it into half and roll again for even sheet.

Repeat and follow these steps to make a flaky puff once baked. The frozen sheet often fails to yield airy flaky puff.

Cut the sheet into smaller length-wise pieces, place the filling and fold over.

Use the egg wash the sheet and brush a layer over individual pastry for even browning.

Place the filled puffs on baking tray and bake at 400 F for 20 mins, turn over and bake for 5 mins more

Egg wash – egg white with water and salt.

Spinach-cheese filling

Sauté the chopped spinach with butter. Add salt and red pepper flake as per taste.

Use the cooked spinach and pieces of cheddar cheese together as filling

Potato-peas filling

In a saucepan, heat butter, add turmeric powder and green peas. Optional – Add onion to sauté till golden brown in this step.

Peal, cook and mash the potato, add it to the saucepan and mix well.

Sprinkle the red chilli (paprika) powder, Indian masala and salt as per taste.

Throw in some chopped cilantro leaves
